Zucchini or summer squash

Summer squash Orzo

Ingredients:

  • a few yellow scalloped summer squash or any other zucchini variety (the yellow scalloped squash is sweeter and preferred by kids) ..the smaller the squash the more flavorful is ..as always choose organic
  • 2-3 garlic cloves
  • orzo (do not substitute with other pasta..it’s not going to work well)

If the squash is organic don’t need to peel. Using a cheese shredder (the large blade), shred the squash. Peel and mince the garlic clove. Sauté the garlic in avocado oil (or your choice of oil) for a minute or two. Be careful not to over cook..burned garlic doesn’t taste good :).  Add the shredded squash to the cooked garlic. Add salt and pepper and cook the squash till a little brown. Taste for salt and pepper and adjust to your liking. Cook the orzo per directions. Mix the cooked squash with the orzo. If it feels like you have too much  squash save some for latter. Serve with Parmesan or your choice of cheese. This can also be a healthy school lunch for next day.

Tip: if you are using green zucchini, peel it before shredding it.
