Beets

Beets are packed with a lot of health benefits. Here is a way to make the kids eat them.

Beet Cream Soup

Ingredients :
1 medium onion peeled and cut in pieces
2-3 medium organic beets preferably red
1 celery stalk diced
chicken or vegetable stock or water
2 medium red potatoes ( should be less than beets)
organic half and half
organic heavy cream ( optional)
small bunch of dill (for grown ups)

Preparation:

Wash and peel the beets, cut them in pieces. Wash and peel potatoes, cut them in pieces. Sauté the onion briefly with oil.  Add celery,  beets and potatoes.  Add stock or water to cover the veggies (no more than that or you will  end up with a liquid soup instead of cream soup). Boil till beets and potatoes are tender. Blend with a hand blender for some texture or with a high performance blender like Vitamix for a velvety smooth soup. Add half and half little by little. Add salt and pepper. Taste and adjust. For kids serve with heavy cream in a squeeze bottle so they can trace drawings on the top. Since the soup is red/pink colored , the white cream will show nicely any drawings. This will make it fun and entertaining for them and hopefully they will enjoy it. For grown up serve with plenty of chopped fresh dill on top.
