These recipes are intended to be useful to moms with picky eaters . When my daughter was 5 years old I realized that she was mostly eating “white”..that means white foods like cheese, pasta, mashed potatoes and so on avoiding any color of the rainbow (the veggie rainbow) ..the way the kids are supposed to eat. Researching the Internet and reading books on this theme, I put together a collection of recipes that were agreeable by her and her friends. Kids that would never eat peas or fennel at home would ask extra from the fennel and pea soup. The recipes are not professional and are not intended to be professional except the ones that are from different sources. More exactly there are not exact quantities. My philosophy is “taste and adjust.” Everybody’s taste is different and what works for some, might not work for others. The ingredients and the way to prepare are important but be free and adjust the quantities to adapt to your liking.
It is very important for kids to eat as close to nature as possible in order to be healthy. Making veggie cream soup from scratch is an easy way to make kids eat their vegetables. I like to use organic ingredients as much as possible. Having fresh ingredients also matter for the quality of the food, and for the nutritional value. One way to get fresh veggies is the farmer’s market. Another way where this is possible is CSA or Community Supported Agriculture boxes. I live in California and I use a great CSA called High Grounds Organics.
